JIMMY DEAN SAUSAGE AND POTATO PANCAKE
Ingredients
- 1 PACKAGE JIMMY DEAN regular Flavor Fresh Pork Sausage
- 3 cups frozen shredded hash browns, thawed
- 1/3 cup minced green onion
- ½ cup shredded Cheddar cheese
- 1 teaspoon chili powder (optional)
- 2 tablespoons chopped parsley (optional)
- Salt and black pepper
- 2 eggs, lightly beaten
- Vegetable oil
Instructions:
- Preheat grill 5 minutes.
- Unwrap sausage and pull apart into quarter-size pieces. Brown pieces on grill 2 to 3 minutes or until no longer pink. Remove from grill, crumble or chop into small pieces; set aside. (Alternately, slice sausage into patties; grill 5to 7 minutes. Remove patties from grill and chop into small pieces.)
- In medium bowl combine sausage, hash browns, onion, cheese, chili powder and parsley, if desired. Season with salt and black pepper to taste. Stir in eggs and blend well.
- Pour mixture onto grill, spreading evenly to cover entire grilling surface ½-inch thick. (Depending on grill size, recipe may need to be grilled in two batches. Do not overfill grill.) Brush top of sausage-potato mixture with vegetable oil.
- Grill 10 to 12 minutes until golden brown. Side off grill onto cutting board or platter. Repeat if needed.
